Coca-Cola Cupcakes
2 cups coca cola (not diet)
1 cup cocoa powder
1/2 c unsalted butter
1 1/4 cups caster sugar
1/2 c packed firmly brown sugar
2 cups standard flour
1 1/4 teaspoon baking soda
1 teaspoon salt
2 large eggs
Method:
Preheat oven to 150 degrees approx. Line 2x 12 cupcake trays with cupcake liners.
In a small saucepan, heat the Coca-cola, cocoa powder and butter over medium heat until the butter is melted. Add the sugars and whisk until dissolved. Remove from the heat and let cool. In a large bowl, whisk the flour, baking soda and salt together.
In a small bowl, whisk the eggs until just beaten, then whisk them into the cooled cocoa mixture until combined. Gently fold the flour mixture into the cocoa mixture. The batter will be slightly lumpy - but do not over beat, as it will make the cupcake tough.
Pour the batter into the prepared cupcake liners and bake for about 15-20 minutes.
Use a small skewer inserted into the cake and if it comes out clean, then they are cooked.
Transfer onto wire rack immediately to cool completely before icing them.
Whipped Buttercream
215 g butter (softened)
950g icing sugar
2 tablespoons boiling water
1/2 thickened cream
2 teaspoons vanilla extract
Cream butter for about 2-3 minutes until light and fluffy. Add 1/2 the icing sugar and the boiling water and mix until creamy. Add the remainder of the icing sugar, thickened cream and the vanilla extract and beat until creamy. You made need a little more icing sugar, will depend on the consistency you are after.
Lastly pipe the Whipped Buttercream onto your cooled cupcakes and top with the coca cola bottles.
